SENNA BASIL'S 1 YEAR BIRTHDAY PARTY 🌿 + VEGAN GF BANANA SMASH CAKE RECIPE

What a dreamy party this was!!! It was so fun to prepare all this delicious vegan food to share with our friends and family. We had such a delicious spread!! Raw ball fruit kabobs, raw pitaya balls, hummus sampler platter, my special green cilantro sauce (sharing the recipe in the birthday vlog!) spahghetti squash tahini basil salad, black beans, chocolate cake for the adults with sweet potato frosting😋 Oh and of course sweet potato chips!! (My weakness)  The best part was watching Senna's reaction to it all... she is such a ham!! She LOOOVED being sang to and the way she attempted to eat her cake was jusy beyond..... and

her Banana Smash Cake turned out so good that all the adults were grabbing chunks with their hands off her high chair 😂 It was hit!! I topped it with a sugar free coconut cream frosting.  I hope you guys enjoy this smash cake recipe and please let me know if you try it for your little one!! The best part is that it is, Vegan, Gluten-free, Oil-free, Sugar-free and Nut-free. It is filled with simple, delicious and nutritious ingredients to nourish your little one and their developing gut. ​HEALTHY BANANA SMASH CAKE 

VEGAN, GF, OIL-FREE, SUGAR-FREE, NUT-FREE​

2 ripe bananas

4 dates

1 1/2 tsp vanilla

1 tbs Apple Cider Vinegar

1 cup plant based milk

1 and 1/4 cups buckwheat flour

1/4tsp stevia

1/2 teaspoon salt

1 tsp baking soda

1tsp baking powder

Makes 3 4 inch rounds, 2 6inch rounds or 1 9 inch pan. I used 2 of the 4 inch rounds for Senna's cake and the 3rd was for Mom and Dad to sample :)

Set oven to 350 degrees F

Line baking pans with parchment paper and grease with coconut oil (optional if using non stick pans)

Add the dates, banana, milk, Apple cider vinegar and vanilla to a food processor or any blender and mix well. In a medium sized bowl add buckwheat flour, salt, baking soda, baking powder and stevia. Mix well. Then add the wet banana mixture to the dry ingredients. Stir and combine well until it is a thick batter. Pour into pans and bake for 21-25 minutes depending on your oven. I like to check middle with a toothpick or do the "shake test" and see if middle jiggles. Less time you will have a "gooey-er" cake and more time will be a drier crumb. Both delicious! Let sit in pans for 20 minutes before removing and continue to cool before frosting.

​COCONUT CREAM FROSTING 

1 can of full fat coconut milk or cream (refrigerated overnight)

3 tbs coconut butter

1/2 - 3/4 cup peeled and cooked white sweet potato

3-4 tbs coconut flour

1/4 tsp stevia + tiny bit more depending on your desired sweetness

1/2 tsp vanilla

2 pinches of salt

2 Squeezes of lemon

Scoop the thick creamy part of the canned coco milk and add to blender. Save the coc water for smoothies :) (or if you need a little to blend frosting smooth)

Add all ingredients to a blender and blend well. I like to use a food processor. If too runny slowly add more coconut flour to thicken up. If too thick add a tiny bit of left over coconut water from can. I would start with only 3 tbs of coconut flour. This frosting does thicken and harden in the fridge so if you refrigerate before you frost you may need to either let sit out to soften up or put bowl over boiling water to slightly melt down and stir well before frosting. :)
