HEALTHY BANANA SMASH CAKE

VEGAN, GF, OIL-FREE, SUGAR-FREE, NUT-FREE

2 ripe bananas

4 dates

1 1/2 tsp vanilla

1 tbs Apple Cider Vinegar

1 cup plant based milk

1 and 1/4 cups buckwheat flour

1/4tsp stevia

1/2 teaspoon salt

1 tsp baking soda

1tsp baking powder

Makes 3 4 inch rounds, 2 6inch rounds or 1 9 inch pan. I used 2 of the 4 inch rounds for Senna's cake and the 3rd was for Mom and Dad to sample :)

Set oven to 350 degrees F

Line baking pans with parchment paper and grease with coconut oil (optional if using non stick pans)

Add the dates, banana, milk, Apple cider vinegar and vanilla to a food processor or any blender and mix well. In a medium sized bowl add buckwheat flour, salt, baking soda, baking powder and stevia. Mix well. Then add the wet banana mixture to the dry ingredients. Stir and combine well until it is a thick batter. Pour into pans and bake for 21-25 minutes depending on your oven. I like to check middle with a toothpick or do the "shake test" and see if middle jiggles. Less time you will have a "gooey-er" cake and more time will be a drier crumb. Both delicious! Let sit in pans for 20 minutes before removing and continue to cool before frosting.

COCONUT CREAM FROSTING

1 can of full fat coconut milk or cream (refrigerated overnight)

3 tbs coconut butter

1/2 - 3/4 cup peeled and cooked white sweet potato

3-4 tbs coconut flour

1/4 tsp stevia + tiny bit more depending on your desired sweetness

1/2 tsp vanilla

2 pinches of salt

2 Squeezes of lemon

Scoop the thick creamy part of the canned coco milk and add to blender. Save the coc water for smoothies :) (or if you need a little to blend frosting smooth)

Add all ingredients to a blender and blend well. I like to use a food processor. If too runny slowly add more coconut flour to thicken up. If too thick add a tiny bit of left over coconut water from can. I would start with only 3 tbs of coconut flour. This frosting does thicken and harden in the fridge so if you refrigerate before you frost you may need to either let sit out to soften up or put bowl over boiling water to slightly melt down and stir well before frosting. :)

PLACENTA GOODNESS

Hi guys! I hit the 6 week postpartum milestone! Yay! It truly is a milestone. I feel like I am finally adjusted to my new life with my baby, thriving, and loving every second. I sincerely understand now the importance and significance of the first 40 days- or as some call it the fourth trimester. It's this sacred time between mom and baby where nothing else in the entire world matters but that babe's needs, health and well being. I think it will of course always be that way, but those first weeks they are so tiny and helpless! Earth is so new and scary for them and they need mama oh so much. I believe that their auras are not fully developed yet either  and moms aura supports baby's. It's amazing feeling what it truly means to be needed by someone. But not just anyone! This precious, tiny, squishy perfect human that you brought to life inside of you. It it is the most spiritual yet densely physical, primal experience. The first little bit after having baby can be sensitive, emotional, blissful and at times overwhelming. You just spent 9 months harboring an insane amount of hormones for you AND the baby. And then after birth everything is lost. A lot of women suffer from this. And have feelings of despair and sadness or even just a little "baby blues". I feel so grateful that I hardly experienced any of these! I really owe it to encapsulating and taking my Placenta. I'm not kidding I could rave about this!! These were truly my happy pills. There were moments where I would start to feel overwhelmed or super anxious about taking my baby out etc. I would go to the cabinet and take my Placenta and literally within the hour felt calm and was able to find peace. I wonder if also it's because of the enzymes and herbs she adds?! At first I thought it was a coincidence but then it worked every single time. I started with 2 twice a day and then upped to 2 three times a day because why not? I was feeling the benefits and wanted to reap them! I also had ZERO issues with breastfeeding. Not one! My milk came in on the end of the third day and it was STRONG. I heard lots of big gulping:) Senna gained a whole pound in two weeks! I really believe the hormones in the Placenta helped this happen. I had my baby at 11:52pm on a Wednesday evening and Rachel was there to pick it up by 10am the next morning. It was so fun to chat with her about my birth and she had such a shine and radiance about her, I not only  felt happy to see her but confident and trustful of her with my sacred organ that gave my baby life.  My pills were delivered the next day by noon in the CUTEST packaging.  They were encapsulated with love. I could feeel it. 💗 But I'm not done raving about Rachel. The best part  about her services is that she is there to give you counsel or advice on anything! I had many questions about my gbs and she gave me an insane amount of helpful recommendations, recipes and even water kefir grains!!! Turns out we are both fermenting nerds!! 🤓 I am so happy and grateful to be able to say she is more than my Placenta encapsulation specialist. She is now my dear, dear friend. I know she is meant to be here to help heal and guide mama's. The divine feminine energy is strong at this time on our planet! I love the support and kindness that I see and receive in this mama culture. I'm so grateful, so at peace. So in love with my baby and motherhood. And now that the time of rest and healing is over, it's time to reclaim my body and get strong and healthy as ever. I'm ready to get back to the active person I was and I can not wait to get moving again and start my new physical wellness journey💪🏼🙌🏼
