BUCKWHEAT BREAD 2 WAYS
Guys!! I am so dang excited to share these buckwheat bread recipes with you!! I have been working on these recipes for MONTHS trying to get them absolutely perfect and I think I’ve done it if i do say so myself ;) sometimes on your healing journey, you crave bread. Like bad. I thought for quite some time that I would never be able to eat bread again! All the bread recipes I tried that had ingredients that would work for me fell apart or didn’t turn out. So I set out on a mission to create my own. I love this bread cuz I can eat it and feel NOTHING. Literally no reactions!!! Not one. Kind of life changing for a gal like me who is sensitive to everything. It’s such a treat! Enjoy the savory version as avocado toast or with tahini & tomato with some dulse or cilantro on top. I love the banana bread version with coconut butter and sliced banana. But honestly it doesn’t even need toppings it’s so good on its own! I know there are quite a few different flours in here but i promise it’s worth it. The texture and feel is so dang satisfying. We are lucky if a loaf lasts longer than 1 day in our house 😂 please tag me if you try either of these! I love to see your creations! 🙌🏼😘
BANANA BUCKWHEAT BREAD
VEGAN, GF, NUT-FREE, REFINED SUGAR FRRE
2 chia eggs (2tbs chia + 6 tbs water)
3 mashed ripe bananas
1 tsp vanilla or 1/2 tsp vanilla liquid stevia
1 tbs Apple cider
3 tbs sun butter (or any nutbutter of choice)
1/2 cup water
1 cup buckwheat
1/2 cup chickpea
1/2 cup flax
2 tbs coconut flour
1 tbs psyllium husk
1 tbs baking powder
1 1/2 tsp cinnamon
1/4 tsp salt
1/4 tsp stevia (or more to taste)
Set oven to 350 degrees. In a bowl mash the 3 bananas. Add all the other wet ingredients to the banana and stir well. Set aside. In a separate bowl combine all the dry ingredients and mix well. Add the wet to the dry until fully combined. Dough should be slightly sticky. Pour into a lined loaf pan or silicone baking loaf pan. Pop in the oven for 50-60 min and enjoy:) (the magic number for me was 55 min but check at 50min because all ovens are different :) )
SAVORY BUCKWHEAT LOAF
VEGAN, GF, NUT FREE
1 cup buckwheat flour
1/2 cup chickpea flour
1/2 cup ground flax seed
2 tbs coconut flour
1 tbs psyillum husk
1 tsp salt
1 tsp Garlic powder
1 tsp rosemary
1 tbs baking powder
1/4 cup chia + 1 cup water
3 table spoons tahini (or any nutbutter of choice)
1 tbs ACV
1 cup water
*Feel free to add any other seasonings of choice :) *
Set oven to 350. Mix the chia and 1 cup water let sit for about 15 min to create a gel.
In a separate bowl mix up all the dry Ingredients. Add the ACV and tahini to the chia gel once it’s formed. Then mix the wet with the dry and add the remaining 1 cup water. Mix well and add to a lined loaf pan:) i sprinkled on top with garlic salt, rosemary, sesame seeds and pumkin seeds 🌿 bake at 350 for 50-60 minutes or when knife comes out clean :)
