PROTEIN COOKIE DOUGH BITES

Hi guys!! I have been so excited to share this recipe! These bites have some sort of other worldly, magical, cloud-like texture that I can not get enough of!! They have become a staple in my kitchen and are so great to pop in in between meals or a late night snack. They are low carb, moderate amount of protein and full of healthy fats. I feel great after eating them!! Taste and texture are just like cookie dough!! Thanks to the secret ingredient.... CAULIFLOWER! Who would of guessed that this versatile little veggie could make such a yummy sweet treat! Cauliflower helps fight inflammation, balance hormones and super high in vitamins and minerals especially vitamin C and K. I sweetened these with organic uncut stevia but they would probably be great with coconut sugar or dates or agave although I haven’t tried it and am unsure of what it would do to the texture. Protein Cookie Dough Bites

 

2 cups steamed then cooled cauliflower

2 scoops vegan vanilla protein powder

3 tbs coconut flour

2 tbs softened coconut butter

1tbs coconut oil (can do coconut butter for oil-free)

1/4 tsp stevia

1/4th tsp salt

1 tsp vanilla

2 tbs cacao nibs

 

Makes 16

 

Place all ingredients besides the cacao knibs in food processor or high speed blender. It helps to put the cauliflower in first. Make sure to steam the cauliflower long enough to be very tender and soft. Blend until soft dough is formed and all ingredients are well incorporated. Then stir in by hand the cacao nibs. Roll into balls and place in fridge or freezer to firm up. Enjoy!

 

Can be kept in fridge or freezer. If kept in freezer let sit out for about 5 min to soften up before enjoying.
