Raw Peachy Dream Bars
RAW, PALEO, VEGAN, GF, DF
6 pitted dates
3/4 cup sunflower seed (or any nut on hand)
1/4 cup flax
1/8 cup chia
1/8 tsp salt
1/2 tsp vanilla
2 tbs coconut butter (or coconut oil)
1 tbs of plant based milk if needed to make moldable
1 cup soaked cashews or sunflower seeds
1 cup full fat coconut cream (top of can)
3-4 medium peaches (I skinned mine)
4-5 tbs of coconut butter or oil (I used coco butter)
1/2 tsp vanilla
1/2 tsp uncut stevia or sweetener or choice (maple syrup or agave would work great!) maybe 1/8- 1/4 cup?
Juice of half a lemon
2 Pinches of salt
Dash of cinnamon
3-4 Sliced fresh figs for toppings
Place 1 cup of cashews or sunflower in a bowl and cover with warm water for about 1 hour. (Filling) optional if you have an amazing blender. I think this step gives it a creamier texture!
Put all the crust ingredients into a food processor and pulse to form a meal that sticks together when you pinch it. Add more coconut butter or milk if it seems too dry to press. Press into a baking tray lined with parchment paper. (I used a wide loaf pan) then dice the peach and arrange on top of the crust and place in freezer. (this is so you get a bite of full fresh peach in every bite! Plus it looks so beautiful when you slice 💜)
Then rinse your food processor and add all the filling ingredients. Make sure to drain and rinse the soaked cashews or sunflower seeds before adding. Blend on high for about 2 minutes to make sure it is a whipped and creamy texture. Sample the mixture and test sweetness factor to your liking. Could also add the other half of lemon if desired. Get crust out of freezer and pour on top and swirl evenly with a spatula. Thinly slice figs (I used about 3) and arrange them gently on top of mixture and back to the freezer they go! Cover and let them freeze for about 2-3 hours. Enjoy!!
